Position Overview
As a bartender, you are both the face and the engine of the guest experience at the bar. Your role is to craft exceptional beverages with speed, precision, and consistency while maintaining a spotless and organized bar. In our German Bierhall and craft cocktail program, you must balance high-volume beer service with advanced cocktail execution, all while demonstrating extensive product knowledge and a proactive mindset. Anticipating both guest and team needs before issues arise is key to success in this fast-paced environment.
Core Responsibilities
1. Guest Service & Beverage Execution
- Greet bar guests within 30 seconds with energy and hospitality.
- Provide knowledgeable recommendations on Haus made biers and craft cocktails.
- Prepare and serve drinks quickly, accurately, and with consistent quality.
- Anticipate guest needs—refills, water, recommendations—before being asked.
- Engage guests with an authentic and welcoming Bierhall experience.
2. Bar Organization & Cleanliness
- Keep all bar surfaces clean, sanitized, and free of clutter throughout service.
- Maintain a well-stocked and organized bar at all times (garnishes, glassware, spirits, beer lines).
- Perform ongoing cleaning tasks (bar mats, floors, tools) to ensure a safe and sanitary work environment.
- Ensure draft lines and taps are properly maintained and free from buildup.
3. Service Well & Team Support
- Maintain speed and accuracy on all service well tickets to support the floor team.
- Prioritize service tickets over direct bar guests when needed to keep the restaurant flowing.
- Assist servers with guest drink needs, questions, or problem-solving during high-volume times.
- Communicate clearly and proactively with servers, barbacks, and management.
4. Pre-Shift & Post-Shift Duties
- Complete all bar prep before the shift (stocking beer, spirits, juices, garnishes).
- Ensure proper par levels and tools are in place before opening.
- Complete end-of-shift cleaning, stocking, and closing tasks with precision.
- Check out with management to confirm side work and closing duties are completed.
5. Anticipation & Sense of Urgency
- Recognize guest and team needs before they are voiced and act immediately.
- Continuously scan the bar, service well, and floor to identify what needs attention.
- Move quickly but safely, never compromising cleanliness or drink quality.
Service Standards & Steps of Service
- Greet bar guests: Within 30 seconds of arrival
- Drink order: Taken and entered immediately
- Execution: Bier poured within 1–2 min; cocktails 3–5 min
- Checkbacks: Within 2 minutes or 2 sips
- Clean as you go: Bar top, tools, and glassware maintained throughout shift
- Pre-bus: Remove glassware/plates continuously
- Farewell: Thank and invite guests back, reset bar seat immediately

- Guest Bar Orders: Bier within 1 minute, cocktails within 3–5 minutes.
- Accuracy Rate: 99% order accuracy with minimal comped/re-made drinks.
2. Cleanliness & Organization
- Bar Top & Guest Area: Wiped and sanitized within 30 seconds of guest departure.
- Back Bar & Tools: Maintained free of spills, clutter, and debris throughout the shift.
- Garnish & Prep Standards: Fully stocked and refreshed by start of shift and mid-shift.
- End-of-Shift Close: 100% of cleaning checklist completed and signed by manager.
3. Product Knowledge & Upselling
- Bier Knowledge: Able to accurately describe all HAUS made biers on tap.
- Cocktail Knowledge: Mastery of haus cocktails, classic recipes, and seasonal features.
- Upselling: Offer at least 2 upgrade or feature recommendations per guest interaction (e.g., premium spirit upsell, bier flavoring, bier flight suggestion, specialty cocktail).
4. Guest Interaction & Experience
- Greeting: Acknowledge and welcome bar guests within 30 seconds.
- Checkbacks: Within 2 minutes or 2 sips of drink delivery.
- Guest Satisfaction: Maintain a 4.5+ guest feedback rating (or equivalent internal measure).
5. Teamwork & Support
- Service Well Priority: 100% of service well tickets prioritized over bar guests during peak times.
- Cross-Department Support: Actively assist servers, barbacks, and other departments during high-volume periods.
- Communication: Clear, respectful communication at all times—zero tolerance for delays caused by miscommunication.
6. Anticipation & Initiative
- Proactive Solutions: Identify and resolve potential guest or service issues before escalation (e.g., noticing empty glassware, running low on supplies).
- Continuous Motion: “No empty hands” rule applied 100% of the shift—moving product, cleaning, or assisting.
