We are seeking a high-energy Food Truck Operations Manager to treat this mobile unit like their own store. You will lead, manage, and grow every aspect of our food truck operations. While you will receive direct support from company leadership in marketing, event booking, and staffing pipelines, you will be the captain of the ship—ensuring seamless day-to-day execution, exceptional quality, profitability, and customer delight.

Key Responsibilities

1. Daily Operations & Unit Management

  • Manage day-to-day food truck operations like an independent store, taking full ownership of performance, inventory, and cleanliness.

  • Ensure strict compliance with local health department regulations, food safety standards, and safety inspections.

  • Oversee truck maintenance, generator upkeep, food equipment care, and inventory replenishment.

  • Manage commissary kitchen prep and ensure high-quality food prep matching Gionino’s signature quality and recipes.

2. Team Leadership & On-Site Execution

  • Lead on-site event crews, delegating responsibilities and keeping energy levels high.

  • Work collaboratively with corporate support to schedule and train enthusiastic team members for mobile operations.

  • Deliver exceptional customer service, maintaining Gionino’s reputation for great food and community connection.

3. Business Growth & Event Coordination

  • Collaborate with marketing and booking teams to maximize schedule efficiency and target high-revenue opportunities.

  • Engage with clients on-site at private parties, corporate events, and festivals to build long-term relationships and secure repeat business.

  • Track key performance metrics (food costs, labor costs, event ROI) and identify growth opportunities to increase sales.

Experience

2+ years of store management, restaurant leadership, or food truck operation experience.

Mindset

Entrepreneurial drive, proactive problem-solving ability, and high accountability ("runs it like their own business").

Licensing

Valid Driver’s License with a clean driving record (ability to drive/maneuver food truck unit safely). ServSafe certification preferred.

Schedule Flexibility

Willingness to work weekends, evenings, and peak seasonal event hours across Northeast Ohio.

Physical Demands

Ability to lift up to 50 lbs, stand for extended periods, and operate in compact mobile kitchen environments.
