Position Summary:
The Cook is a crucial member of our culinary team, responsible for the preparation of all non-sushi menu items. This role requires a skilled and efficient professional with experience in a fast-paced kitchen environment. The ideal candidate will be a dedicated individual with a strong work ethic, a commitment to quality, and a passion for Japanese cuisine. They will work closely with the Sushi Chefs and management to ensure smooth operation and consistently high-quality food.
Key Responsibilities:
Food Preparation & Cooking:

  • Prepare and cook all hot and cold food items on the menu, including but not limited to tempura, teriyaki, udon, ramen, gyoza, and various appetizers.
  • Demonstrate a strong understanding of Japanese cooking techniques, flavors, and ingredients.
  • Follow recipes and portion control guidelines with precision to maintain consistency and quality.
  • Properly clean, cut, and prepare all vegetables, meats, and other ingredients as needed for service.
  • Manage multiple cooking stations simultaneously during peak hours without sacrificing quality or speed.
  • Monitor food temperature and quality throughout the cooking process.

Kitchen Operations & Sanitation:

  • Maintain a clean and organized work station at all times, following the principles of mise en place.
  • Adhere strictly to all health, safety, and sanitation standards and regulations.
  • Assist in managing and rotating inventory to ensure freshness and reduce waste.
  • Communicate effectively with the sushi chefs and other team members to ensure a seamless flow of orders.
  • Assist with receiving and storing food deliveries.
  • Perform general cleaning duties as assigned, including washing dishes and utensils, cleaning cooking surfaces, washing and mopping floors.

Team Collaboration:

  • Work efficiently and collaboratively with all kitchen staff to ensure orders are prepared and delivered promptly.
  • Communicate any issues with food quality, ingredients, or equipment to a manager immediately.
  • Assist in training and guiding new kitchen staff as needed.
  • Maintain a positive and professional attitude in a high-pressure environment.

Required Skills & Qualifications:

  • Prior experience as a Cook or in a similar culinary role, in a Japanese or Asian-cuisine restaurant is a plus.
  • Strong knowledge of food safety, handling, and sanitation procedures.
  • The ability to work in a fast-paced and high-pressure environment.
  • Excellent communication and teamwork skills.
  • A strong work ethic and a positive, can-do attitude.
  • The ability to stand for long periods and lift heavy objects.
  • Flexibility to work evenings, weekends, and holidays.
