Job Overview

The Role:
The Key Managerwill work closely with the Frita Management Team to provide support and oversee day-to-day operations of the restaurant. Responsible for managing all hourly employees both FOH and BOH, the Key Manager will oversee all elements of food, beverage, and service. To succeed in this role, they must be able to effectively undertake the following day-to-day duties and responsibilities and lead with integrity and embody conviviality!
Day to Day:
These responsibilities highlight some of the key function of the Key Manager will perform. Additional tasks may be assigned as necessary.
· Mange menu preparation and execution to meet the expected standards
· Drive throughput and steps of service
· Properly manage the execution of recipes and menus items, ensuring they are made to spec
· Assist with managing inventory, ordering, and food quality
· Ensuring proper food temperatures when cooking and storing
· Keeping the workstation and kitchen equipment clean, organized, and sanitized
· Managing labor in accordance with business needs
· Ensure Health Department compliance as it pertains to the operation
· Ensure DOL Compliance; staff breaks, time management, etc
· Complete team member training in all stations of the restaurant; prep, hotline, expo, counter, runner, mini-bar
· Become an expert of all restaurant stations: counter, mini-bar, runner, kitchen
· Continuously provide support to all FOH & BOH staff and actively participate in the cycle of service as needed
· Ensure kitchen staff adhere to set standards, procedures, and protocols
· Ability to use electronic systems, such as computers and tablets

Requirements/Skills:
· Strong work ethic, positive attitude, and genuine passion for hospitality
. Comfortable using kitchen knives and equipment such as grills, ovens, steamers and warmers in food preparation
. Ability to use electronic systems, such as computers and tablets
· 2 years + experience in a similar environment
· Excellent verbal & written communication
· Understanding of Microsoft Office applications (Excel, Word, Outlook etc.)
· Ability to coordinate multiple tasks while maintaining required standards of operation in daily restaurant activities
· Ability to stand for extended periods and lift up to 30 lbs
· NYC Food Protection Certificate holder
