Head Chef Job Description - The Old York Tavern
Tucked in an unassuming corner at Niagara St and Wellington, The Old York Tavern was designed to be your escape from the daily grind. We are a neighbourhood Tavern, open 7 days a week, serving lunch, dinner, and brunch. A space where the bartender knows your name, and the daily specials accompany a bistro-esque menu that is regularly updated with fresh and seasonal ingredients.
We are looking for an experienced and passionate **Head Chef** to join our team and lead our kitchen operations. The ideal candidate will have a creative flair, strong leadership skills, and a keen sense of business acumen to maintain the high standards of our kitchen.
This is a full time position that requires days, nights, evenings based on operational needs. Starting salary of $55,000 not including tips.
Key Responsibilities:

  • Menu Development & Daily Specials:
  • Craft and execute daily and weekly specials that showcase fresh, seasonal ingredients.
  • Regularly update our bistro-inspired menu to reflect the latest culinary trends and customer preferences.
  • Costing & Budget Management:
  • Ensure all menu items and specials are costed accurately, balancing quality with profitability.
  • Work closely with management to optimize food cost margins while maintaining quality standards.
  • Team Leadership:
  • Lead, inspire, and mentor a team of kitchen staff, fostering a positive and professional work environment.
  • Conduct regular training sessions to ensure consistency, high standards, and adherence to health and safety regulations.
  • Scheduling & Staff Management:
  • Create and manage weekly staff schedules, ensuring optimal coverage for all service periods.
  • Oversee staff performance and manage any personnel issues that may arise.
  • Inventory Management:
  • Manage inventory levels to ensure sufficient stock for daily operations while minimizing waste.
  • Maintain relationships with suppliers, ensuring timely and cost-effective deliveries of ingredients and supplies.
  • Waste Tracking & Reduction:
  • Implement and monitor waste tracking systems, minimizing food waste through creative use of ingredients and efficient kitchen processes.
  • Health & Safety Compliance:
  • Maintain a clean and organized kitchen, adhering to all food safety and sanitation guidelines.
  • Ensure all equipment is properly maintained and functioning to the highest standards.

Qualifications:

  • Proven experience as a Head Chef or similar role in a fast-paced kitchen.
  • Strong knowledge of menu costing, inventory management, and waste reduction strategies.
  • Excellent leadership and communication skills.
  • Ability to work flexible hours, including weekends and holidays.
