Summary
The baker and kitchen staff’s primary responsibility is to ensure a clean, safe, and efficient operation kitchen area. The main goal is to ensure that products are flowing effectively through the kitchen from preparation, proofing, and cooking to final presentation in the display cases. The baker must ensure that throughout the day enough product is produced to meet demand without compromising quality or having a large surplus of wasted goods at store closing. Additionally, the baker and kitchen staff must ensure that the next day’s initial batch of product is ready and awaiting automatic proofing for the next day’s opening shift.
Just like making our fresh buns, we need to understand the role of each ingredient so we can appreciate how it contributes to a beautiful finished product. This awareness helps us enhance our dynamics so that we can complement, rather than clash—and achieve more together as a team at Lucullus.

Job Duties

  • Work as part of a small team to prepare, bake, and present approved fresh consumable quick service food products following carefully crafted recipes
  • Be responsible for reading production schedules and recipes, measuring and mixing ingredients, moulding and shaping dough, and processing everything through the proofer, ovens, and steamers
  • Work alongside your team to keep the bakery clean, and contribute to a great customer experience
  • Excellent knowledge of health and safety rules and regulations
  • Excellent knowledge of high quality controls for food preparation of baked items
  • Excellent understanding of imperial systems and metrics of measurements
  • Cleans, breaks down, and puts away all baking equipment including: ovens, mixers, proofer, floors, freezer, and refrigerators
  • Ability to dynamically aid the front of house staff when possible
  • Attend to customer inquiries and concerns about ingredients in a professional manner
  • Any and all ancillary duties which may arise or become necessary in order for the bakery to operate at the highest level

Requirements

  • Minimum 1 year experience in similar position
  • Continuous standing/walking for all tasks
  • Ability to work in a hot, hectic environment, stand, walk, bend, use hands and appliances, and lift heavy items for extended periods. Continuous standing/walking for all tasks
  • Constant use of both hands, with frequent wrist rotation and flexing, occasional forceful gripping
  • Flexibility to work around customer demands, including early morning, night, weekend and holiday availability
  • Basic math and computer skillsFrequent lifting and carrying up to 22 kg
  • Frequent turning and reaching
  • Occasional pushing, pulling and some forward bending
  • Ability to lift at least 2.5 kg to a height of 1.7 meters
  • Constant use of both hands, with frequent wrist rotation and flexing, occasional forceful gripping
