Job Overview

As a Prep Specialist, you are the backbone of our kitchen. You’ll be responsible for ensuring our assembly line is stocked. Since we serve some ingredients raw, your commitment to food safety and "picture-perfect" produce prep is what keeps our customers coming back.

Responsibilities

  • Fish & Protein: Cut sushi-grade fish (Tuna, Salmon) into uniform cubes while maintaining strict temperature controls.
  • Fruits/Vegetables: Slice and dice, a variety of produce (cucumbers, radishes, avocados, etc.) ensuring consistent presentation.
  • Sauces/Teas/Soup/Rice: Follow proprietary recipes to batch-prepare dressings, teas, soup and rice.
  • Food Safety: Maintain a spotless workstation; adhere to all health department regulations regarding food handling and storage.
  • Station Support: Restock the front-of-house "make line" to ensure the service team never runs out of ingredients.

Skill

  • Knife Skills: You should be comfortable and efficient with a chef’s knife.
  • Efficiency: You can work through a prep list quickly without sacrificing quality.
  • Reliability: You are a team player who shows up on time and ready to hustle.
  • Experience: Previous experience in a sushi bar, seafood department, or QSR is a major plus, but we are willing to train the right attitude.

Physical Requirements

  • Ability to stand for long periods.
  • Ability to lift up to 40 lbs
