Job Overview

A lead server is an expert in Sales, Customer Appreciation, and employee Morale. This individual is knowledgeable about the steps of service, menu (food/beverage), and restaurant rules and procedures. The Captain server will assist the general manager in various administrative duties and help train new staff.

Responsibilities

  • Make sure the restaurant is ready to close and open for the next shift, reporting all issues to the Manager
  • Store Key Management
  • Assist with Inventory
  • Stock (stock wines when received and report any issues to the Manager)
  • Training (Conduct once a week, a training planned with the manager on topics related to Service, Food, Beverage, and Event)
  • POS Assistance (when training, they can perform trades, discounts, comps, voids, adjustments)
  • Uniform check in (Making sure we are ready for service with wine key, pens, bank, and attire)
  • Walk-through of restaurant (Identify and resolve any issues with cleanliness, organization, stock/prep, floor plan)
  • Reservations and Flow Review (Review Reservation seating and flow of the night with the Host
  • Team and come up with a plan for service for approval by the Manager. The plan will include Server Sections/Rotations.
  • Assign Side Work / Sign Offs (With Manager manager-approved list of side work and closing duties, the captain will assign duties to team members and make sure they are complete before signing off on check-out reports)
