Job Summary

This is a leadership role in a high-energy environment. You’ll work closely with the General Manager and ownership to open a new location from the ground up, setting up systems and processes, opening vendors account, overseeing daily operations, managing staff development, controlling inventory and labor, and ensuring high standards in food, beverage, and service. You must be available for late nights, weekends, and holidays, and bring a high level of focus and urgency to a fast-paced, guest-first operation.

As the Assistant General Manager for Buccan Coral Gables, you will support all FOH operations with a specific focus on beverage development and cost management. This is a highly collaborative and guest-facing leadership role requiring deep knowledge of hospitality standards, wine and spirits, vendor relationships, and team development. You will act as Interim GM in their absence, help lead a successful restaurant opening, and drive excellence in every aspect of service.

Core Responsibilities

  • Leadership & Operations
  • Support all daily operations including opening, service, and closing.
  • Supervise and train managers, Captains, and FOH hourly team.
  • Ensure full compliance with health, safety, and labor regulations.
  • Manage team accountability and performance reviews.
  • Maintain a clean, safe, and service-forward environment.

Beverage Program Ownership

  • Develop, implement, and manage a best-in-class wine, spirits and cocktail program.
  • Control beverage inventory, cost of goods, and pricing strategy.
  • Maintain strong relationships with local and national beverage vendors.
  • Lead staff training on beverage knowledge and service standards.
  • Oversee wine storage, bar setup, and pairings.

Guest Experience & Floor Presence

  • Build loyalty and name recognition through consistent guest interaction.
  • Understand the surrounding market and how Buccan fits within Coral Gables’ culinary scene.
  • Handle feedback with grace and convert issues into positive outcomes.
  • Ensure the music-lighting driven atmosphere aligns with the guest experience.
  • Lead pre-shift meetings to align team goals and service priorities.
  • Spend part of every shift connecting with guests — learn their preferences, ensuring repeat visits.
  • Proactively engage with guests and resolve issues with professionalism.
  • Support service team with table touches, pacing, and team communication.
  • Ensure consistent execution of Buccan hospitality and tone of voice.
  • Participate in weekly managers’ meetings and contribute to continuous improvement.
  • Ensure printed and digital menus are accurate and updated regularly with specials or seasonal items.
  • Maintain a safe bank and ensure proper tip payout and accurate cash-outs.
  • Set and maintain service standards across FOH shifts.
  • Financials & Administrative
  • Support P&L accountability including labor targets and inventory control.
  • Monitor beverage COGS and ensure pricing aligns with profitability goals.
  • Support new team onboarding, documentation, and scheduling.
  • Ensure proper cash handling, reconciliation, and compliance protocols.

Required Qualifications

  • 5–8 years of experience as an AGM or GM in a fine dining or upscale, high-volume setting.
  • Deep understanding of wine, spirits, and beverage programming.
  • Proven experience maintaining low beverage cost and managing vendor relationships.
  • Strong leadership presence with a passion for training and development.
  • Experience opening new restaurants and developing SOPs is highly valued.
  • Proficiency in Toast POS, inventory, and scheduling platforms.
  • Flexible schedule including evenings, weekends, and holidays.
