Job Summary
The AM Prep Cook is responsible for preparing ingredients and executing batch production for our daily menu, ensuring high-quality standards in a fast-paced scratch kitchen. This role focuses on morning prep tasks, including portioning, chopping, marinating, and assembling, to support seamless service. The ideal candidate is detail-oriented, efficient, and passionate about maintaining cleanliness and food safety.
Key Responsibilities

  • Batch Preparation: Prepare sauces (e.g., tomato, garlic cream), dressings (e.g., ranch, dijon vinaigrette), condiments (e.g., tartar sauce, Post Secret Sauce), and dough (e.g., pita, flatbread) 1-2 times per week, totaling approximately 6 hours weekly, with portioning distributed across the week (~1.5-3 min/day per item).
  • Portioning: Portion proteins (e.g., salmon, sea bass, chicken), noodles, and other ingredients 1-2 times per week, ensuring accuracy for daily use (e.g., 65 min/week for salmon, ~10-11 min/day).
  • Daily Prep: Chop vegetables (e.g., tomatoes, basil), marinate proteins (e.g., chicken, wings), bread items (e.g., Parmesan Crusted chicken, walleye), and caramelize onions for burgers, averaging 17 hours/day across the team.
  • Quality Control: Monitor ingredient freshness, taste-test batches, and address inconsistencies (e.g., ensuring cod texture, lasagna consistency) based on recent customer feedback.
  • Cleanliness: Maintain a spotless workstation, wipe down surfaces, and sanitize condiment containers and tools, upholding the kitchen hygiene standards our guests have praised.
  • Team Support: Collaborate with the chef and staff to prep (including batching and dishwashing), adjusting to peak days, and assist with assembly as needed.
  • Safety Compliance: Adhere to food safety regulations and support water filtration/ice machine maintenance following recent concerns.

Qualifications

  • 1+ years of prep cook experience in a scratch kitchen preferred.
  • Ability to work mornings 10:00 AM start) and stand for extended periods.
  • Strong knife skills, knowledge of food safety, and attention to detail.
  • Ability to lift 50 lbs and work in a team-oriented environment.
