Job Summary
Cook and prepare a variety of food products including meats, seafood, poultry, vegetables, sauces, stocks and other food products using a variety of equipment and utensils according to the Daily Prep List.
Activities & Responsibilities
- Refer to the Daily Prep List at the start of each shift for assigned duties.
- Clean and sanitize work station area including tables, shelves, walls, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range and refrigeration equipment.
- Ensure food is stored and cooked at the correct temperature by regulating the temperature of ovens, broilers, grills, fryers, roasters, and other kitchen equipment.
- Prepare a variety of foods, such as meats, vegetables, or desserts, according to customers' orders or supervisors' instructions, following approved procedures in broilers, ovens, grills, fryers and a variety of other kitchen equipment.
- Wash, peel, and cut various foods, such as fruits and vegetables, to prepare for cooking or serving.
- Ensure freshness of food and ingredients by checking for quality, keeping track of old and new items, and rotating stock.
- Weigh or measure ingredients.
- Receive and store food supplies, equipment, and utensils in refrigerators, cupboards, and other storage areas.
- Remove trash and clean kitchen garbage containers.
- Use manual or electric appliances to clean, peel, slice, and trim foods.
- Promptly inform supervisors when equipment is not working properly and when food and supplies are getting low, and order needed items.
- Uses the Standard Recipes for preparing all products; does not rely on the memory of oneself or others.
- Complete opening and closing checklists and assists others in opening and closing the kitchen.
- Responsible for the quality of products served
- Season and cook food according to recipes or personal judgment and experience
- Portion, arrange, and garnish food according to standard portion sizes and recipe specifications
- Observe and test foods to determine if they have been cooked sufficiently
- Carve and trim meats such as beef, veal, ham, pork, and lamb for hot or cold service, or for sandwiches
- Substitute for other cooks during emergencies or rush periods
- Attend all scheduled employee meetings and offers suggestions for improvement.
- Ability to perform in a highly stressful and fast paced environment
- Possess critical thinking ability – must have ability to measure, multiply, and divide portions/ingredients per requirements
- Able to handle high heat environments
- Strict adherence to all safety procedures
Minimum Qualifications
- Must possess food handler’s or food manager's certification
- Preferred: At least 2 years of experience in a similar capacity
- Have exceptional knife skills
- Able to communicate effectively with managers and kitchen personnel
- Able to work in a standing position for long periods of time (up to 8 hours)
