Job Overview:
We are seeking a skilled Chef Leader to oversee our culinary team. The ideal candidate will have experience in various culinary environments, including restaurants, banquets, and catering. As Corporate Chef, you will be responsible for overseeing culinary department operations & production between various locations, working with the on-site team members at each location to ensure consistency & adherence to standards. This job is over 50% administrative & leadership. Time spent in the kitchen should be for the purpose of operating as CIC (chef in charge), general oversight, kitchen testing, & training.

Job Summary & Expectations
- Production, Food Specs, & Packaging:
- Production: Coordinate production company-wide and general food preparation activities. Oversee culinary teams to ensure food preparation/production is done to spec and on time.
- Food Specifications & Documentation: Develop recipe spec sheets & builds to ensure consistency in food preparation.
- Total Party Planner Project: Work to convert company recipes to digital TPP recipe format to allow for production lists, prep lists, & pack lists to generate from the system leading to a more efficient enterprise.
- Packaging & Paper Goods: Research & cost paper goods and packaging options to offer the best product at the best cost. Oversee inventory by kitchen supervisors to place orders as needed.
- Vendor Relationships: Work with fellow department supervisors to maintain existing & develop new vendor relationships.
- Innovation and Improvement:
- Recipe Development: Develop streamlined methods for food prep company-wide. Suggest new or modified recipes, presentation ideas, and general improvements to enhance the culinary offerings.
- Menu Development: Work with the Sales & Ownership to develop menus to ensure a well-rounded & profitable selection of offerings for both a-la-carte, events, & corporate meals.
- Recipe & Menu Costing: Cost out recipes & menus to ensure profitability and offer suggestions as to alternative ingredients or items when necessary.
- Oversight, Training, & Development:
- Culinary Oversight & Spot Checking: Conducting spot checks company-wide to review quality standards & ensure training standards.
- Oversee Kitchen Supervisors: Ensure all kitchen leads are performing roles and tasks as assigned. As culinary department head, assist in progressive measures or disciplinary actions as needed and assist in implementing policies and procedures (i.e. opening, closing, cleaning, etc) to ensure a well-running department.
- Onboarding: Develop culinary onboarding & ongoing training programs to ensure culinary team members are aware of all company techniques & standards.
- Equipment: Oversee the upkeep of culinary equipment company-wide.
Requirements:
- Ability to lead and motivate a team of culinary professionals
- Proven experience working as a Chef in catering or similar setting
- Strong knowledge of various cuisines and cooking techniques
- Excellent communication and organizational skills
- Understanding of banquet and catering operations
- Passion for the food industry and creativity in menu planning
- Degree in Culinary Arts or relevant field
- Must be able to commute between various company locations as needed
